Last year I participated in the Whip It Up challenge. Maddy and I had a great time finding and preparing new recipes. The best part is always the eating! For the most part we were successful and didn't ever make anything that required us to order pizza.
This year's challenge begins June 28, and I'm already looking for new and exciting recipes. I want to try new grill recipes, other than the basic steak and chicken. Maddy is looking for desserts.
I love that Maddy is into learning about cooking, and also isn't afraid to try new foods. It's a fun and educational way to do that quality time parenting thing, you know?

Here are a few we have done with the kids in the past.
BBQ Banana Splits
Ingredients:
6 large, unpeeled bananas
2 6 oz. pkgs. semisweet chocolate chips
1 10.5 oz. pkg. miniature marshmallows
Cut the stem off each banana, keeping the peel intact. Slice the peel from stem to end, leaving a small amount uncut on each end. Leaving the bananas in their peels, carefully cut them into slices without puncturing the skin. Spray 6 banana-size strips of aluminum foil with nonstick cooking spray and place a banana on each strip. Gently stuff equal portions of marshmallows and chocolate chips into each banana. Wrap the foil around the bananas tightly and grill for approximately five minutes, or until the chocolate and marshmallows are melted. Peel open and eat with a spoon. Put them over ice cream if you like.
Grilled Apples with Streusel Topping
1/2 cup quick-cooking oatmeal
1/2 cup flour
1/2 cup packed brown sugar
1/4 teaspoon cinnamon
1/4 cup butter, cut into small pieces
1/2 cup pecans, chopped
4 large baking apples, cored and cut in half
melted butter
1. Make the topping ahead of time buy oatmeal, flour, brown sugar, and cinnamon. Add the butter and work it in evenly with a fork or your fingertips until it is pea sized. Stir in the pecans and refrigerate until you are ready to make the dessert.
2. Brush the cut side of the apples with the melted butter. Arrange the apples cut side down on the grill and cook over medium heat for twenty minutes. Turn them once after ten minutes.
3. Spoon the topping onto the cut side of the apples. Cook for another five minutes, or until the topping is golden brown and glazed. Serve with ice cream or whipped cream.
